  2. Made this for Xmas day breakfast and everyone loved it. My wife has requested it for dinner several times since. I add green onions and what ever shade of bell pepper I have on hand and crushed red pepper for some spice. The recipe is easy to scale up or down based on how many people you want to feed or if you want extra for a quick breakfast on the go. My son will eat it cold right out of the fridge on his way out the door.
