Manicotti Italian Casserole

Some of my family members refer to this dish as manicotti, while others call it an Italian casserole. So, I’ve decided to name it Manicotti Italian Casserole! It’s one of my absolute favorite meals to make, and the best part is that it’s incredibly easy. When hosting gatherings, I prepare the full recipe, but for my family, I usually cut it in half.

Ingredients

  • 1 pound rigatoni pasta
  • 1 pound ground beef
  • 1 pound Italian sausage
  • 1 (8 ounce) can mushrooms, drained
  • 2 (32 ounce) jars spaghetti sauce
  • 1 ½ pounds shredded mozzarella cheese
  • Thinly sliced pepperoni

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Cook the pasta: Bring a large pot of lightly salted water to a boil. Add the rigatoni and cook until al dente, about 8 to 10 minutes. Drain the pasta and set it aside.
  3. Prepare the meat: In a large skillet over medium heat, brown the ground beef and Italian sausage. Once cooked, use a slotted spoon to transfer the meat to a baking dish.
  4. Assemble the casserole: Stir in the drained mushrooms, spaghetti sauce, and cooked pasta into the baking dish with the meat. Mix well. Sprinkle the shredded mozzarella cheese over the top, then layer with thinly sliced pepperoni.
  5. Bake: Place the baking dish in the preheated oven and bake until the cheese is brown and bubbly, about 20 minutes.
