  • 1 teaspoon turmeric
  • 1 teaspoon chili powder

  • 1 cup vegetables bell peppers, peas, or spinach

  • 2 cups rice or chapati traditional accompaniments

Preparation Steps
  1. Chop the chicken into bite-sized pieces, mince garlic, and grate fresh ginger. Gather the spices and coconut milk.
  2. Heat oil in a large pot over medium-high heat. Cook the chicken for 5-7 minutes until golden brown.
  3. Add minced garlic and grated ginger, sauté for 2-3 minutes until fragrant.
  4. Pour in coconut milk, add spices, and stir well to combine.
  5. Cover and simmer for 30-40 minutes, stirring occasionally until chicken is cooked and the sauce thickens.
  6. Taste and adjust seasoning as necessary.
  7. Serve hot over rice or with chapati, garnish with cilantro or parsley if desired.
