- In a large mixing bowl, thoroughly blend the cooked and chopped bacon with sour cream, softened cream cheese, shredded Mexican cheese, and shredded cheddar cheese. Add chopped green onions, walnuts, ranch seasoning, garlic powder, and ground black pepper. Use a spatula or an electric mixer on low for about 2 minutes until well combined.
- Once the mixture is smooth and evenly mixed, use your hands to gently shape it into a ball. For a neat appearance, lightly dampen your hands with water before forming the ball. Aim for a diameter of about 8 inches. Place the cheese ball on a sheet of plastic wrap, tightly wrap it, and refrigerate for at least 30 minutes to firm up.
- While the cheese ball firms up, prepare the coating. In a small bowl, combine additional chopped bacon, shredded cheddar, chopped green onions, walnuts, and poppy seeds. Stir well until everything is evenly mixed.
