- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Combine shredded cooked chicken, softened cream cheese, shredded cheddar cheese, salsa, garlic powder, onion powder, cumin, salt and pepper in a mixing bowl until well blended.
- Warm your tortillas in the microwave for about 15 seconds, scoop 2–3 tablespoons of filling onto each, and roll tightly. Place seam-side down on the baking sheet.
- Lightly spray or brush the tops of the taquitos with olive oil, then bake for 15-18 minutes until golden brown and crispy.
- Allow to cool slightly before serving. Best served with dips like sour cream or guacamole.
