- Preheat your oven to 375°F (190°C).
- Melt 2 tablespoons of unsalted butter in a large skillet over medium heat. Add 2 minced garlic cloves and sauté until fragrant.
- Add 6 cups of fresh spinach, stirring until wilted, about 3-5 minutes. Season with salt and pepper and remove from heat.
- Reduce heat to low, pour in 1 cup of heavy cream, the juice and zest of half a lemon, and a pinch of nutmeg. Stir well and simmer for 2-3 minutes.
- Stir in ½ cup of grated Parmesan cheese until melted. Adjust seasoning with salt and pepper.
- Create four small wells in the mixture and crack an egg into each well, seasoning lightly with salt and pepper.
- Sprinkle ¼ cup of Parmesan cheese over the top and bake in the oven for 12-15 minutes.
- Remove from oven and let rest for a few minutes before serving.
