Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Melt 2 tablespoons of unsalted butter in a large skillet over medium heat. Add 2 minced garlic cloves and sauté until fragrant.
  3. Add 6 cups of fresh spinach, stirring until wilted, about 3-5 minutes. Season with salt and pepper and remove from heat.
  4. Reduce heat to low, pour in 1 cup of heavy cream, the juice and zest of half a lemon, and a pinch of nutmeg. Stir well and simmer for 2-3 minutes.
  5. Stir in ½ cup of grated Parmesan cheese until melted. Adjust seasoning with salt and pepper.
  6. Create four small wells in the mixture and crack an egg into each well, seasoning lightly with salt and pepper.
  7. Sprinkle ¼ cup of Parmesan cheese over the top and bake in the oven for 12-15 minutes.
  8. Remove from oven and let rest for a few minutes before serving.
