Step-by-Step Instructions
  1. In a medium bowl, whisk together tahini, za'atar, red wine vinegar, fresh lemon juice, minced garlic, salt, and pepper until smooth and well combined. Set aside a small amount for garnishing later.
  2. Place chicken thighs in a resealable plastic bag or shallow dish, pour the marinade over, ensure each piece is well-coated, seal, and refrigerate for at least 1 hour.
  3. Preheat oven to 400°F (200°C) about 15 minutes before baking.
  4. Line a baking sheet with parchment paper, arrange marinated chicken thighs evenly apart.
  5. Bake for 35 minutes or until internal temperature reaches 165°F (74°C), golden edges indicate perfect cooking.
  6. Remove from oven, let rest for 5 minutes, then serve hot drizzled with reserved marinade, garnished with parsley, lemon wedges, and optional charred peppers.
