- Preheat your grill to medium-high heat, around 400°F (200°C). Spray the grill grates with non-stick spray.
- Slice the eggplant into thick ¼ inch steaks. Aim for uniformity for even cooking.
- Coat each steak with the dry rub on both sides.
- Place the eggplant steaks on the grill and cook for 5 to 7 minutes on one side.
- Flip the steaks and grill for another 5 to 7 minutes on the other side.
