Step-by-Step Instructions
  1. Preheat your grill to medium-high heat, around 400°F (200°C). Spray the grill grates with non-stick spray.
  2. Slice the eggplant into thick ¼ inch steaks. Aim for uniformity for even cooking.
  3. Coat each steak with the dry rub on both sides.
  4. Place the eggplant steaks on the grill and cook for 5 to 7 minutes on one side.
  5. Flip the steaks and grill for another 5 to 7 minutes on the other side.
  6. Brush BBQ sauce over each steak and close the grill lid for an additional 2-3 minutes.
  7. Remove from grill and serve hot as a stand-alone dish or in salads, wraps, or grain bowls.
