Preparation Steps
  1. Rinse and dry your romaine lettuce, chop it into bite-sized pieces and refrigerate to chill.
  2. Season the chicken breasts with olive oil, salt, and pepper. Grill the chicken for 6-7 minutes per side until it reaches 165°F. Let it rest for 5 minutes before slicing.
  3. Slice the strawberries and gala apple into bite-sized pieces and set aside.
  4. Assemble the salad by dividing the chilled romaine lettuce between bowls. Layer with strawberries, apple, craisins, mozzarella cheese, and walnuts.
  5. Top the salad with sliced chicken and drizzle with creamy poppyseed and raspberry vinaigrette.
  6. Serve immediately while still fresh, and toss gently before serving.
