Ingredients

For the Fish
  • 4 fillets Bhetki Fish Use fresh fillets for best flavor; substitute with any firm white fish if unavailable.
  • 2 tablespoons Olive Oil Provides richness; other oils like canola or avocado oil can be used.
For the Sauce
  • 2 oranges Oranges Adds citrus flavor and acidity; lime or lemon can work as substitutes.
  • 4 tablespoons Butter Enhances richness; opt for ghee or margarine for a lighter option.
  • 3 cloves Garlic Adds aromatic depth; garlic powder may be used if fresh is unavailable.
  • 1 tablespoon Honey Provides sweetness; maple syrup is a good vegan alternative.
  • 10 leaves Basil Leaves Fresh herb for aroma and flavor; can be substituted with parsley or cilantro.
  • 1 teaspoon Salt Essential for seasoning; adjust to taste.
  • 1 teaspoon Pepper Complements and balances flavors; fresh cracked pepper adds a nice touch.

Equipment

  • Mixing Bowl
  • Non-Stick Pan

Method

Step-by-Step Instructions
  1. In a mixing bowl, combine the Bhetki fish fillets with olive oil, the zest and juice of one orange, and a generous sprinkle of salt. Allow it to marinate for about 10 minutes.
  2. Heat a non-stick pan over medium heat and drizzle in the remaining olive oil. Carefully place the marinated Bhetki fish fillets in the pan and cook for approximately 3-4 minutes on each side until golden brown.
  3. Remove the fish from the pan and set aside. In the same pan, reduce the heat slightly and add the butter. Once melted, toss in the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the juice from the remaining oranges and a drizzle of honey to the pan, whisking continuously. Allow it to bubble gently for about 2-3 minutes until the sauce thickens slightly.
  5. Tear the fresh basil leaves and stir them into the thickened sauce. Gently add the cooked Bhetki fish back into the pan, coating each piece in the sauce. Cover and let it simmer for another 3-4 minutes.
  6. Transfer the Bhetki fish to a serving platter, drizzling any remaining sauce over the top. Serve with a light salad or crusty bread.

Notes

Expert tips: Always use fresh fish for optimal flavor. Don't rush marination, and adjust the heat to prevent rubbery fish. A thicker sauce clings beautifully to the fish.
