Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan, egg, onion, garlic, salt, and pepper. Mix gently.
  3. Shape into 1-inch meatballs, about 18–20 pieces, and place on a parchment-lined baking sheet.
  4. In a skillet, heat olive oil over medium heat, brown meatballs for 5-7 minutes.
  5. Remove meatballs and deglaze the skillet with bourbon for 1 minute.
  6. Stir in BBQ sauce, simmer until thickened.
  7. Return meatballs to skillet, coat with sauce, and simmer for 2-3 minutes.
  8. Transfer skillet to oven, bake for 10-12 minutes until cooked through.
  9. Slice sub rolls open and toast in the oven for 5 minutes.
  10. Fill toasted sub rolls with meatballs, top with bacon and cheddar.
  11. Return to oven to melt cheese for 2-3 minutes.
  12. Add optional toppings if desired and serve warm.
