Preparation Steps
- Preheat your oven to 350°F (175°C).
- Line a 9-inch cake pan with parchment paper and butter the sides.
- Slice peaches and arrange them in a circular pattern at the bottom of the cake pan, sprinkling cinnamon on top.
- In a saucepan, combine sugar and water over medium-high heat until golden brown, then add bourbon and pour over peaches.
- Cream together softened butter and sugar until light and fluffy.
- Add eggs, one at a time, mixing well, then add bourbon and vanilla.
- Sift together all-purpose flour, almond flour, baking powder, and cinnamon; combine with wet ingredients.
- Pour batter over the caramelized peaches, being careful not to disturb them.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool the cake in the pan for 15-30 minutes before inverting onto a serving plate.
- Slice and serve, optionally with vanilla ice cream.
