Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Line a 9-inch cake pan with parchment paper and butter the sides.
  3. Slice peaches and arrange them in a circular pattern at the bottom of the cake pan, sprinkling cinnamon on top.
  4. In a saucepan, combine sugar and water over medium-high heat until golden brown, then add bourbon and pour over peaches.
  5. Cream together softened butter and sugar until light and fluffy.
  6. Add eggs, one at a time, mixing well, then add bourbon and vanilla.
  7. Sift together all-purpose flour, almond flour, baking powder, and cinnamon; combine with wet ingredients.
  8. Pour batter over the caramelized peaches, being careful not to disturb them.
  9. Bake for 30-35 minutes, or until a toothpick comes out clean.
  10. Cool the cake in the pan for 15-30 minutes before inverting onto a serving plate.
  11. Slice and serve, optionally with vanilla ice cream.
