Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C).
  2. Pat the beef short ribs dry and season with salt and pepper.
  3. In a Dutch oven, heat olive oil and sear the ribs until golden brown.
  4. Remove the ribs and sauté onion, carrot, and celery for 5 minutes.
  5. Add garlic and tomato paste, cooking for 1 minute.
  6. Deglaze with red wine, simmering for 5 minutes.
  7. Return ribs to the pot, add beef broth and herbs, cover, and braise in the oven for 2½ to 3 hours.
  8. Remove ribs, strain sauce, and serve ribs topped with sauce.
