  • 8 ounces Burrata Cheese Fresh mozzarella can be used but won't be as creamy
  • ½ cup Basil Pesto Adjust thickness with lemon juice if necessary
  • 1 teaspoon Kosher Salt Can substitute with sea salt
  • ½ teaspoon Ground Black Pepper Can substitute with regular table salt
Optional Garnish
  • 4 slices Grilled Bread For scooping
  • ¼ cup Finely Chopped Fresh Basil For garnish
  • 2 tablespoons Olive Oil Extra virgin for best flavor

Preparation Steps
  1. Wash the heirloom tomatoes under cool running water and pat them dry. Slice into ¼-inch thick planks or halve smaller varieties.
  2. Place sliced tomatoes on a serving platter, season with kosher salt and ground black pepper. Let sit for a minute.
  3. Nestle the burrata cheese in the center of the tomatoes and break it apart slightly to reveal its creamy interior.
  4. Drizzle basil pesto over the salad and serve immediately.
