Step-by-Step Instructions
  1. In a large bowl, season the shrimp with onion powder, garlic powder, cayenne pepper, and salt.
  2. Heat 1 tablespoon of olive oil in a skillet and cook the shrimp for about 1 minute on each side.
  3. Reduce the heat and add the remaining olive oil; sauté sliced onion and chopped serrano pepper for 3-4 minutes.
  4. Stir in minced garlic and cook for 1 more minute.
  5. Add chopped Roma tomatoes, cover, and cook for about 5 minutes.
  6. Return shrimp to the skillet, stir, cover, and cook for another 3-4 minutes.
  7. Serve immediately with warm tortillas or over rice.
