  • 2 large Eggs Use flax eggs for a vegan option.
  • 0.25 cups Butter (melted) Vegetable oil can be used instead.
  • 1 cups Sharp Cheddar (grated) Gruyère or dairy-free alternatives may also work.
  • 0.25 cups Fresh Chives (minced) Green onions can be used as a substitute.

Equipment

  • Waffle Iron

Method

Cooking Instructions
  1. Preheat your waffle iron according to the manufacturer's instructions, typically set to medium-high heat for about 5 minutes.
  2. In a large mixing bowl, whisk together the flour, salt, and baking powder until combined, then add milk and eggs, stirring gently until just incorporated. Fold in the melted butter, grated cheddar, and minced chives.
  3. Pour about ¾ cup of the mixture into the preheated waffle iron and close the lid. Cook for approximately 4 to 5 minutes until golden brown and crispy.
  4. While the waffles are cooking, prepare the Rosemary Sausage Gravy by cooking sausage in a skillet over medium heat, then adding rosemary and milk until thickened.
  5. Serve the waffles topped with the warm Rosemary Sausage Gravy.

Let waffles rest on a wire rack to maintain crispiness. Double the batch for larger gatherings and feel free to experiment with different cheese or herbs.
