  • 1 cup Smoked Gouda or Smoked Cheddar
  • 1 cup Parmesan Cheese
  • 4 tablespoons Unsalted Butter
  • ¼ cup Fresh Parsley optional, for garnish

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray.
  2. Slice the sweet onions into ¼-inch rounds and place them in a large mixing bowl. Sprinkle in kosher salt, dry mustard powder, garlic powder, smoked paprika, and cayenne if desired. Toss until onions are coated.
  3. Layer half of the seasoned onions in the prepared baking dish. Spread them out evenly. Sprinkle half of the mild cheddar and smoked Gouda cheeses on top.
  4. Top with the remaining seasoned onions, spreading evenly. Sprinkle the rest of the cheddar, Gouda, and all Parmesan cheese over the onions.
  5. Cut the unsalted butter into small pieces and scatter evenly over the cheese layer.
  6. Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  7. After 45 minutes, remove the foil and bake uncovered for an additional 30 minutes until cheese is melted and golden brown.
  8. Once out of the oven, sprinkle fresh parsley on top for garnish. Serve hot.
