Preparation Steps
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay low-carb tortillas flat and spread 2 tablespoons of marinara sauce on each.
- Sprinkle freshly shredded mozzarella cheese on top of the marinara sauce, followed by pepperoni slices.
- Tightly roll the tortillas from one end to form a log shape and brush the outside with olive oil.
- Bake rolled tortillas seam-side down in the preheated oven for 10-12 minutes, until golden brown.
- Allow to cool briefly, then slice into bite-sized pieces for serving.
