  • 4 Green Bell Peppers Halved and seeded
For the Filling
  • 1 lb Ground Beef Can substitute with ground turkey
  • 1 cup Cooked Rice Brown rice or quinoa can be used
  • 1 cup Cheese (shredded) Mix of mozzarella and cheddar
  • 1 cup Tomato Sauce Marinara or diced tomatoes are good substitutes
  • 1 tablespoon Italian Seasoning Dried basil, oregano, and thyme can be substituted
  • to taste Salt
  • to taste Pepper
Optional Topping
  • 1 cup Extra Cheese Use any type for topping

Method
 

Step-by-Step Instructions
  1. Preheat the Oven to 375°F (190°C).
  2. Halve the green bell peppers lengthwise and scoop out seeds and membranes.
  3. In a skillet over medium heat, cook the ground beef for 5-7 minutes, fully cooked and browned.
  4. Combine ground beef, cooked rice, tomato sauce, half of the shredded cheese, and Italian seasoning in a mixing bowl.
  5. Stuff the pepper halves with the filling and pack it tightly but don’t overstuff.
  6. Top each stuffed pepper with the remaining shredded cheese, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 5 minutes until cheese is bubbly.
  7. Let cool for 5-10 minutes before serving.
