Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line your baking dish with parchment paper.
  2. Mash 3 medium ripe bananas in a large mixing bowl until smooth.
  3. Mix in 2 large eggs and 1 teaspoon of vanilla extract until well combined.
  4. Melt 0.5 cup of lightly salted butter and add it to the mixture, stirring well.
  5. Stir in 0.25 cup of honey, 1 teaspoon of ground cinnamon, and 1 teaspoon of baking soda.
  6. Fold in 4 cups of rolled oats gently, adding an extra 2 tablespoons for texture.
  7. Stir in 1 cup of chocolate chips, ensuring even distribution throughout the dough.
  8. Pour the mixture into the prepared baking dish, leveling the top with a spatula.
  9. Press a handful of extra chocolate chips on top for garnish.
  10. Bake in the preheated oven for 30 minutes or until edges are golden.
  11. Allow to cool in the dish for 30 minutes before slicing into 16 bars.
