  • 1 can Chickpeas drained and rinsed
  • 1 Avocado ripe
  • ½ tablespoon Lemon Juice can substitute with lime juice
  • 1 clove Garlic minced
  • 2 tablespoons Green Onion chopped
  • 1 stalk Celery diced
  • 2 tablespoons Dill fresh, chopped
  • ¼ cup Pickles diced
  • to taste Salt
  • to taste Pepper
Optional Add-Ons
  • 2 leaves Lettuce your favorite type
  • 4 slices Bread whole grain, sourdough, or gluten-free

Method
 

Preparation Steps
  1. Drain and rinse one can of chickpeas. In a mixing bowl, use a potato masher to smash them until mostly broken.
  2. Add avocado, lemon juice, garlic, green onion, celery, dill, and pickles to the smashed chickpeas. Season with salt and pepper and stir until creamy.
  3. Lay out your bread slices. Spread a generous scoop of the filling on one slice. Top with lettuce, then place a second slice on top.
  4. Cut each sandwich in half and serve fresh on a plate.
