- Drain and rinse one can of chickpeas. In a mixing bowl, use a potato masher to smash them until mostly broken.
- Add avocado, lemon juice, garlic, green onion, celery, dill, and pickles to the smashed chickpeas. Season with salt and pepper and stir until creamy.
- Lay out your bread slices. Spread a generous scoop of the filling on one slice. Top with lettuce, then place a second slice on top.
- Cut each sandwich in half and serve fresh on a plate.
