Step-by-Step Instructions
  1. Start by preparing your lemongrass. Trim about 5 inches from the stalks and remove the tough outer layers to reveal the tender inner parts. Roughly chop the inner stalks to release their essential oils and delightful citrus fragrance.
  2. In a medium saucepan, combine the chopped lemongrass, granulated sugar, and 1 cup of water. Heat the mixture over medium-high heat until it comes to a boil. Then, reduce the heat and let it simmer for 5-7 minutes.
  3. Once it cools, strain the syrup through a fine-mesh sieve into a bowl, discarding the solids.
  4. Divide the cooled lemongrass syrup evenly between two tall serving glasses, then add freshly squeezed lime juice.
  5. Carefully pour 4 ounces of sparkling soda into each glass, watching the fizz as it combines with the syrup and lime.
  6. Fill each glass with crushed ice to chill the drink, then gently stir to combine the flavors. Garnish with additional basil leaves, reserved lemongrass stalks, and lime wedges.
