  • 1 cup Sweet Corn Canned corn is super convenient.
  • 1 cup Cherry Tomatoes Halve them for the perfect texture.
  • 1 medium Avocado Slice just before serving.
  • ½ cup Red Onion Substitute with green onions for milder flavor.
  • ½ cup Cilantro Parsley can be used for a lighter taste.
For the Dressing
  • 1 cup Cashews Soak them prior to blending for smoothness.
  • ¼ cup Lime Juice Always go for freshly squeezed juice.
  • 1 tablespoon Lime Zest
  • 2 tablespoons Nutritional Yeast Leave it out for a nut-free variation.
  • 1 clove Garlic Garlic powder could work as a quick substitute.
  • 2 tablespoons Olive Oil Swap for avocado oil if preferred.
  • 1 tablespoon White Vinegar Apple cider vinegar would work well too.
  • 1 tablespoon Maple Syrup Agave syrup serves as an excellent alternative.

Method
 

Preparation Steps
  1. Soak 1 cup of cashews in boiling water for about 25 minutes. Drain and blend with ¼ cup lime juice, lime zest, 2 tablespoons nutritional yeast, minced garlic, olive oil, white vinegar, maple syrup, and salt until creamy.
  2. Bring a large pot of salted water to a boil and cook 8 ounces of bow tie pasta according to package instructions for about 10-12 minutes until al dente. Drain and rinse under cold water.
  3. In a large mixing bowl, combine cooled pasta with 1 cup sweet corn, 1 cup halved cherry tomatoes, ½ cup diced red onion, and ½ cup chopped cilantro. Add sliced avocado just before serving.
  4. Drizzle the dressing over the salad and gently toss to coat without mashing the avocado.
  5. Serve immediately or chill in the refrigerator for at least 15 minutes before serving.
