For the Topping
  • ½ cup Greek Yogurt or Sour Cream For the Cilantro Lime Crema.
  • 1 whole Juice of Lime
  • ¼ cup Chopped Cilantro

Step-by-Step Instructions
  1. Prepare Marinade: Whisk together olive oil, lime juice and zest, minced garlic, chopped cilantro, and salt and pepper in a bowl.
  2. Marinate Steak: Place flank steak in a bag, pour marinade over it, seal, and refrigerate for at least 1 hour.
  3. Cook Steak: Preheat skillet or grill, cook steak for 3–4 minutes on each side until medium-rare.
  4. Prepare Rice: Cook rice according to package instructions until fluffy.
  5. Assemble Bowls: Layer rice, black beans, corn, and grilled steak in bowls.
  6. Add Toppings: Drizzle cilantro lime crema over top and garnish with additional cilantro and lime juice.
