Method
 

Step‑by‑Step Instructions
  1. Gather all your ingredients for the Classic Christmas Toffee.
  2. Line a 9x9 inch baking dish with parchment paper and spread the chopped nuts evenly across the bottom.
  3. In a heavy-bottomed pot, combine butter, sugar, water, and salt. Heat over medium heat, stirring often until well combined and bubbling gently for about 5-7 minutes.
  4. Continue cooking until the mixture reaches the hard crack stage at 300°F (149°C), about 10-15 minutes.
  5. Remove from heat and stir in vanilla extract carefully.
  6. Pour the hot caramel over the layer of nuts in the prepared baking dish.
  7. Sprinkle chocolate chips over the warm caramel and cover for about 4 minutes to allow the heat to melt the chocolate.
  8. Sprinkle finely chopped pecans and/or flaked sea salt over the melted chocolate.
  9. Allow to cool completely for about 4 hours or refrigerate to speed up the process.
