- Gather all your ingredients for the Classic Christmas Toffee.
- Line a 9x9 inch baking dish with parchment paper and spread the chopped nuts evenly across the bottom.
- In a heavy-bottomed pot, combine butter, sugar, water, and salt. Heat over medium heat, stirring often until well combined and bubbling gently for about 5-7 minutes.
- Continue cooking until the mixture reaches the hard crack stage at 300°F (149°C), about 10-15 minutes.
- Remove from heat and stir in vanilla extract carefully.
- Pour the hot caramel over the layer of nuts in the prepared baking dish.
- Sprinkle chocolate chips over the warm caramel and cover for about 4 minutes to allow the heat to melt the chocolate.
- Sprinkle finely chopped pecans and/or flaked sea salt over the melted chocolate.
- Allow to cool completely for about 4 hours or refrigerate to speed up the process.
