- Gather all your ingredients for the Classic Christmas Toffee.
- Line a 9x9 inch baking dish with parchment paper and spread the nuts evenly across the bottom.
- In a heavy-bottomed pot, combine butter, granulated sugar, water, and salt. Heat over medium heat until combined and bubbling.
- Attach a candy thermometer and cook until it reaches the hard crack stage at 300°F.
- Remove from heat and stir in vanilla extract.
- Pour the hot caramel over the nuts and allow to cool for 2 minutes.
- Sprinkle chocolate chips over the warm caramel, cover for 4 minutes, then swirl the chocolate.
- Optional: sprinkle finely chopped pecans and/or flaked sea salt.
- Allow to cool completely for about 4 hours before cutting into squares.
