- In a mixing bowl, combine lite coconut milk, sparkling water, blue raspberry martini mix, and coconut extract. Whisk until smooth and uniform.
- Carefully pour the vibrant mixture into popsicle molds, filling each about three-quarters full.
- Take frozen raspberries and gently push them down into the filled molds.
- Place the filled molds into the freezer and let them freeze for at least 8 hours or overnight.
- When ready to serve, run warm water over the outside of the molds for about 10-15 seconds to loosen the popsicles.
- Wet the tops slightly before dipping them in blue sprinkles and unsweetened coconut flakes.
