Step-by-Step Instructions
  1. In a mixing bowl, combine lite coconut milk, sparkling water, blue raspberry martini mix, and coconut extract. Whisk until smooth and uniform.
  2. Carefully pour the vibrant mixture into popsicle molds, filling each about three-quarters full.
  3. Take frozen raspberries and gently push them down into the filled molds.
  4. Place the filled molds into the freezer and let them freeze for at least 8 hours or overnight.
  5. When ready to serve, run warm water over the outside of the molds for about 10-15 seconds to loosen the popsicles.
  6. Wet the tops slightly before dipping them in blue sprinkles and unsweetened coconut flakes.
