Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, place halved ripe tomatoes, quartered onions, and whole garlic cloves. Drizzle with olive oil and season with salt, pepper, and sugar.
  3. Roast the vegetables for 30-40 minutes until tomatoes are soft and garlic is golden.
  4. Let the vegetables cool slightly, then transfer to a blender and blend until smooth.
  5. Pour the blended mixture into a saucepan and add broth. Stir to combine.
  6. Bring the soup to a gentle simmer over medium heat for about 10 minutes.
  7. Stir in optional heavy cream and fresh basil before serving.
  8. Adjust seasoning as needed and serve hot with crusty bread.
