Ingredients
  

For the Stew
  • 2 pounds Beef Stew Meat Beef chuck or any stew meat
  • 1 large Onion Yellow or white onion
  • 1 large Daikon Radish Substitute with turnips if needed
  • 1 whole Garlic Smashed
  • 2 inches Ginger Sliced into coins
  • ¼ cup Oyster Sauce Soy sauce can be substituted
  • ¼ cup Soy Sauce (light and dark) Use tamari for gluten-free
  • 2 tablespoons Maggi Sauce Optional
  • 2 tablespoons Fish Sauce Optional but recommended
  • 2 tablespoons Brown Sugar Alternatives include cane, coconut, or palm sugar
  • 4 cups Beef Stock Low-sodium versions may need extra salt
For the Spice Bag
  • 2 whole Star Anise Substitute with anise extract if unavailable
  • 2 whole Bay Leaves
  • 1 stick Cinnamon Stick Use ground cinnamon at half the amount if needed
  • 3 whole Cardamom Pod Ground cardamom is an alternative
  • 1 tablespoon Coriander
  • 1 teaspoon Black & White Peppercorns Feel free to use various pepper types
  • 1 tablespoon Five Spice Powder Optional
For Serving
  • ¼ cup Fresh Thai Chilies
  • ¼ cup Cilantro For garnish
  • ¼ cup Scallions For garnish

Method
 

Steps
  1. Prepare the Spice Bag by gathering all spices and placing them in a muslin bag or cheesecloth.
  2. Combine beef stew meat, onion, daikon radish, garlic, ginger, oyster sauce, soy sauces, Maggi sauce, and brown sugar in a large slow cooker or stockpot, and cover with beef stock.
  3. Submerge the spice bag into the stew mixture.
  4. Cook on stovetop for 3-4 hours on low heat or 8 hours in a slow cooker.
  5. Once cooked, check for tenderness, stir and serve over rice or noodles, garnished with fresh herbs.

Notes

For thicker stew, remove beef, mix cornstarch with water, and simmer liquid until thickened. Can also be made in an Instant Pot in 45 minutes. Store leftovers for up to 4 days in the fridge or freeze for 3 months.
