Step-by-Step Instructions
  1. Cut the large avocados in half and remove the pits. Scoop the creamy flesh into a medium mixing bowl.
  2. Using a potato masher, gently mash the avocados to your desired consistency.
  3. Squeeze fresh lime juice over the mashed avocados.
  4. Heat your grill to medium-high. Place two cobs of corn on the grill for 10-12 minutes, turning occasionally.
  5. Mix in finely diced red onion and chopped cilantro to the bowl of avocado and corn.
