Step-by-Step Instructions
  1. In a large mixing bowl, add chopped green bell pepper, frozen corn, canned diced tomatoes, minced purple onion, black-eyed peas, and black beans. Also, toss in sliced black olives. Pour in the Italian dressing, then add freshly zested and juiced lime, diced green chiles, cumin, salt, and pepper. Stir everything together until evenly coated.
  2. Cover the bowl with plastic wrap or a lid to seal in the flavors and refrigerate for at least 1 hour, ideally overnight.
  3. Before serving, gently fold in diced avocados and chopped cilantro without mashing the avocados.
