  • 8 ounces gemelli or spiral pasta any short pasta can be substituted
  • 1 cup artichoke hearts drained, canned or frozen
  • 1 cup plum tomatoes diced
  • 1 large avocado cubed, ripe
  • ½ cup grated Romano cheese grated Parmesan can be substituted
For the Dressing
  • cup canola oil olive oil can be used for richer taste
  • 2 tablespoons lime juice freshly squeezed preferred
  • ¼ cup fresh cilantro minced
  • 1 teaspoon lime zest optional
  • 1 teaspoon kosher salt can swap with table salt
  • to taste ground pepper freshly cracked preferred

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente, about 8-10 minutes. Drain and rinse with cold water.
  2. In a large mixing bowl, combine the cooled pasta, artichoke hearts, diced tomatoes, and avocado. Add grated Romano cheese and gently toss.
  3. In a small bowl, whisk together canola oil, lime juice, cilantro, lime zest, kosher salt, and pepper.
  4. Drizzle dressing over the pasta mixture and gently fold to ensure ingredients are evenly coated.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving.
