- Boil a large pot of salted water. Add pasta and cook until al dente, about 8–10 minutes. Reserve 1 cup of pasta water, then drain.
- Pat shrimp dry and season with Cajun seasoning. In a skillet, heat olive oil and butter over medium-high heat. Cook shrimp for 1-2 minutes per side until pink. Remove from skillet.
- Lower heat, add remaining butter, and sauté garlic for 30-60 seconds until fragrant.
- Stir in tomato paste and simmer for 1 minute.
- Pour in chicken broth, increase heat, and reduce for 3-5 minutes.
- Stir in heavy cream and half of the Parmesan. Simmer gently for 2-3 minutes.
- Combine pasta and shrimp in the sauce, ensuring all is coated.
- Stir in remaining Parmesan and parsley. Adjust seasoning and serve immediately.
