Prepare the Lemon Syrup
- In a medium bowl, combine the lemon zest and sugar, allowing the mixture to rest for 2 hours or overnight.
- Cover it with plastic wrap to help the sugars absorb the lemony essence.
Create the Syrup
- Transfer the lemon zest and sugar mixture to a pot and add ¼ cup of water.
- Heat over medium heat, stirring until the sugar completely dissolves, about 5 minutes.
Cool Down the Syrup
- Remove the pot from heat and strain out the lemon zest using a fine mesh strainer.
- Allow the syrup to cool down to room temperature for about 10 minutes.
Mix the Lemonade
- In a large pitcher, combine cold water, freshly squeezed lemon juice, and strawberry Calpico.
- Pour in the cooled lemon syrup, stirring gently to mix.
Chill and Serve
- Refrigerate the lemonade for at least 15 minutes to let the flavors develop.
- When ready to serve, pour over ice and garnish with lemon slices.
