Step-by-Step Instructions for Creamy Strawberry Chia Pudding
- Start by washing 1 pound of fresh strawberries under cool water. Remove the stems and cut them into halves or quarters for easier blending. Place the prepared strawberries into a blender and blend until smooth, creating a vibrant strawberry puree.
- In a large mixing bowl, combine the strawberry puree with 1 cup of soy milk, ¼ cup of chia seeds, 1 cup of strawberry Greek yogurt, 2 tablespoons of maple syrup, and 1 teaspoon of vanilla extract. Use a whisk to thoroughly mix all the ingredients together until smooth and creamy.
- Allow the combined pudding mixture to rest for about 5 minutes at room temperature to let the chia seeds absorb the liquid and thicken the pudding.
- Transfer the chia pudding mixture into individual jars or bowls. Cover them with lids or plastic wrap, and refrigerate for at least 2 hours, or preferably overnight.
- Before serving, give the Creamy Strawberry Chia Pudding a good stir. Serve directly from jars or bowls and top with granola and fresh strawberry slices.
