  4. Soak the tapioca pearls in filtered water for at least 1 hour. Drain afterwards.
  5. In a saucepan, combine soaked tapioca, lite coconut milk, sea salt, maple syrup, and vanilla. Simmer for 10-15 minutes.
  6. Remove from heat and cool for about 10 minutes before refrigerating for at least 1 hour.
  7. Serve the pudding in bowls topped with warm maple-roasted plums and fresh fruit garnishes.
