Preparation

  3. Spread the seasoned sweet potato cubes onto the prepared baking sheet in a single layer to ensure even cooking.
  4. Bake in the preheated oven for 25–30 minutes, flipping halfway through for even browning.
  5. While the sweet potatoes bake, melt unsalted butter in a saucepan and stir in parsley, rosemary, and thyme. Cook until fragrant.
  6. Once the sweet potatoes are done, sprinkle grated Parmesan cheese over them and drizzle the herb butter on top. Toss gently to combine.
  7. Serve immediately while hot for the best flavor and texture.
