Step-by-Step Instructions
  1. Prepare Marinade: In a medium mixing bowl, whisk together Mochiko flour, potato starch, eggs, sugar, soy sauce, mirin, chopped scallions, minced garlic, and grated ginger until you achieve a smooth and creamy marinade.
  2. Marinate Chicken: Trim the chicken thighs into strips and coat them in the marinade. Refrigerate for at least 4 hours or overnight.
  3. Heat Oil: In a Dutch oven, pour enough vegetable oil to submerge the chicken pieces. Heat the oil to 350°F (175°C).
  4. Fry Chicken: Lower the marinated chicken strips into the oil in batches, frying for 4-5 minutes until golden brown and crispy.
  5. Serve: Arrange the fried chicken on a platter and add spicy mayo and furikake as desired.
