Steps
- Preheat your oven to 425°F (220°C) and line a baking tray with parchment paper.
- Wash the mini potatoes and pat them dry. Slice each potato thinly from the top, making sure not to cut all the way through.
- Toss the prepared potatoes in a large bowl with olive oil, salt, and the Cajun spice mix until fully coated.
- Arrange the seasoned potatoes on the baking tray without overcrowding them.
- Bake for 30–40 minutes, turning the tray halfway for even cooking. They’re done when crispy and golden.
- Mix vegan mayonnaise, lemon juice, and an extra pinch of Cajun spice in a small bowl until combined.
- Remove the baked potatoes from the oven, cool slightly, and serve warm with the vegan cajun mayo.
