- In a large mixing bowl, combine the cooked leftover rice, chopped onion, grated cheddar cheese, egg, minced garlic, fresh parsley, and diced red bell pepper. Mix thoroughly until all ingredients are well incorporated.
- Add the Greek yogurt, lime juice, salt, black pepper, and smoked paprika into the rice mixture. Stir everything together until evenly blended.
- Gently fold in the all-purpose flour until the mixture holds together but isn't overly sticky. Shape the mixture into about 8 patties, each approximately ½ inch thick.
