  • 1 cup grated cheddar cheese or dairy-free cheese/mozzarella
  • ½ cup Greek yogurt or sour cream/non-dairy yogurt
  • 1 medium red bell pepper or any color bell pepper
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper adjust to taste
  • 1 teaspoon smoked paprika or regular paprika/chili powder
  • 1 tablespoon lime juice or lemon juice
  • ¼ cup all-purpose flour or rice flour for gluten-free
  • 2-3 tablespoons olive oil for frying, or coconut/avocado oil

Step-by-Step Instructions
  1. In a large mixing bowl, combine the cooked leftover rice, chopped onion, grated cheddar cheese, egg, minced garlic, fresh parsley, and diced red bell pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Add the Greek yogurt, lime juice, salt, black pepper, and smoked paprika into the rice mixture. Stir everything together until evenly blended.
  3. Gently fold in the all-purpose flour until the mixture holds together but isn't overly sticky. Shape the mixture into about 8 patties, each approximately ½ inch thick.
  4. In a non-stick skillet, heat olive oil over medium heat until shimmering. Ensure the oil is hot enough that a small sprinkle of the mixture sizzles.
  5. Carefully add the patties to the hot skillet in batches. Fry each side for about 3-4 minutes until golden brown and crispy.
