  • 1 small Red Onion Thinly sliced
  • 3 cloves Garlic Minced
For Seasoning
  • 2 tablespoon Olive Oil Can substitute with another oil
  • 1 teaspoon Salt Adjust according to taste
  • 0.5 teaspoon Black Pepper Adjust according to taste
  • 1 teaspoon Dried Oregano Fresh can be used as a substitute
  • 1 teaspoon Dried Basil Italian seasoning can be used as a substitute
  • 0.5 teaspoon Crushed Red Pepper Flakes Optional for heat
For the Finish
  • 1 Juice Lemon Bottled juice can be used if fresh is unavailable
  • 0.25 cup Fresh Parsley Chopped

Method
 

Step-by-Step Instructions
  1. Lightly grease the bottom of your crockpot with cooking oil or olive oil.
  2. Trim and halve the chicken breasts, then place them at the bottom of the greased crockpot.
  3. Top the chicken with diced tomatoes, red onion, garlic, and olives.
  4. Sprinkle layers with salt, black pepper, oregano, and basil, then drizzle with olive oil.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  6. Squeeze lemon juice over the chicken and stir gently, then sprinkle with parsley before serving.
