Method
 

Step-by-Step Instructions
  1. In a large bowl, combine the panko breadcrumbs and whole milk, stirring until the breadcrumbs are thoroughly moistened.
  2. Add the ground beef, diced onions, egg, and beefy onion soup mix to the bowl. Mix until fully incorporated.
  3. Roll mixture into meatballs about 1–1½ inches in diameter and place on a plate.
  4. Heat a skillet over medium-high heat with a splash of oil, searing meatballs for 1–2 minutes on each side until browned.
  5. In the crockpot, pour in the beef broth, followed by the tomato paste and soy sauce, stirring well.
  6. Add the seared meatballs, diced potatoes, baby carrots, and any remaining diced onions to the crockpot.
  7. Cover and cook on low for about 7–8 hours or high for 4–5 hours.
  8. For a thicker gravy, mix cornstarch with cold water and stir into the crockpot during the last 30 minutes.
  9. Check for doneness, ladle into bowls, serve warm, and enjoy.
