  1. Finely shred the green cabbage and iceberg lettuce using a sharp knife or a mandoline. Place into a large mixing bowl.
  2. Dice the cucumbers and add to the bowl. Chop the toasted walnuts and chewy apricots and fold into the mix.
  3. If using farro, cook according to package instructions until tender. Drain and let cool.
