Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. Slice the acorn squash in half lengthwise and scoop out the seeds. Brush cut sides with olive oil and season with salt and pepper.
  3. Place the squash cut-side down on a baking sheet and bake for 25-30 minutes until fork-tender.
  4. Melt unsalted butter in a medium pan over medium heat. Add diced apples, walnuts, and cranberries; cook for about 5 minutes.
  5. Stir in cinnamon, nutmeg, brown sugar, and a pinch of salt; cook for an additional 2-3 minutes.
  6. Flip the baked squashes cut-side up and spoon in the filling, pressing gently.
  7. Drizzle with maple syrup, return to the oven, and bake for another 15-20 minutes.
  8. Let cool for a few minutes before serving warm.
