  • 1 tablespoon Lemon Juice or lime juice as an alternative
  • 1 large Egg for vegan version, use a flaxseed egg
For the Vegetables
  • 1 cup Asparagus can be swapped for green beans
  • 1 tablespoon Olive Oil or melted butter for richer taste
  • to taste Salt using sea salt can elevate the taste
  • to taste Black Pepper
  • 1 cup Peas frozen peas work well without needing to thaw
For the Garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Roll out the store-bought puff pastry until smooth and consistent in thickness.
  3. Cut the pastry into six rectangles measuring 5-by-6 inches and transfer to baking sheets.
  4. In a mixing bowl, combine ricotta cheese, garlic powder, lemon zest, lemon juice, and egg until smooth.
  5. Toss asparagus with olive oil, salt, and black pepper until well-coated.
  6. Spoon the ricotta mixture onto each pastry rectangle, leaving a small border, and top with asparagus.
  7. Bake for 20 minutes in the preheated oven until golden brown.
  8. Sprinkle peas over the top and return to the oven for an additional 7-10 minutes.
  9. Allow to cool slightly and garnish with fresh mint before serving.
