Step-by-Step Instructions
- Begin by opening a can of black beans and draining them. In a large bowl, use a fork or potato masher to lightly mash the beans, leaving some whole for texture. This should take about 2 minutes.
- Add in finely chopped cilantro, panko breadcrumbs, and your chosen seasonings to the mashed beans. Stir the mixture until everything is well combined, ensuring an even distribution of flavors. This should take about 2-3 minutes.
- Divide the mixture into equal portions and roll them into patties, roughly ½ inch thick. You should be able to make about 4-6 patties depending on your preferred size.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Once shimmering, carefully place the patties in the skillet, cooking for about 5 minutes on each side until golden-brown.
- While the burgers are cooking, combine diced pineapple, additional chopped cilantro, and any spices you desire in a separate bowl. Mix well for about 3-5 minutes.
- Once the Black Bean Burgers are cooked and browned, place each patty on a bun and generously spoon the fresh pineapple salsa on top. Serve with your favorite sides.
