Preparation Steps
- In a large mixing bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of sumac, 1 teaspoon of oregano, 1 teaspoon of honey, and a pinch of salt until smooth.
- Add ½ of a thinly sliced red onion to the bowl, coating well with dressing. Marinate for at least 10 minutes.
- Dice 1 cucumber into small pieces and chop a handful of parsley.
- Add 1 can of drained butter beans to the bowl, along with marinated onions and dressing. Toss to combine. Fold in cucumber and parsley, then add ½ cup of crumbled feta.
- Taste and adjust seasoning, serving on a bed of Greek yogurt, drizzled with olive oil and sprinkled with sumac.
