For the Topping
  • 1 cup 60% Cacao Semisweet Chocolate Morsels Substitute with dark chocolate if preferred.
  • 0.25 cup Toasted Coconut Toast for added crunch.

Method
 

Step-by-Step Instructions
  1. In a food processor, pulse the flour, salt, and sugar until mixed. Add cubed butter until it resembles coarse crumbs. Gradually add ice water until the dough comes together.
  2. Divide the dough into two discs, wrap in plastic, and refrigerate for at least 2 hours.
  3. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  4. Roll out one disc of dough to ⅛-inch thickness and cut into 4-inch circles. Repeat with remaining dough.
  5. Spoon 1 tablespoon of filling onto half of each circle, brush edges with beaten egg, fold over, and seal edges.
  6. Place on baking sheets, bake for 22-25 minutes until golden brown, and let cool.
  7. Melt chocolate in intervals and drizzle over cooled hand pies. Sprinkle with toasted coconut.
