- In a food processor, pulse the flour, salt, and sugar until mixed. Add cubed butter until it resembles coarse crumbs. Gradually add ice water until the dough comes together.
- Divide the dough into two discs, wrap in plastic, and refrigerate for at least 2 hours.
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- Roll out one disc of dough to ⅛-inch thickness and cut into 4-inch circles. Repeat with remaining dough.
- Spoon 1 tablespoon of filling onto half of each circle, brush edges with beaten egg, fold over, and seal edges.
