- In a medium bowl, combine 2 cups of Greek yogurt, 1 cup of creamy peanut butter, and 2 tablespoons of honey or maple syrup (if using). Use a spatula or whisk to mix until smooth and creamy.
- Gently fold in ½ cup of mini chocolate chips into the yogurt-peanut butter mixture.
- Using a small cookie scoop or a tablespoon, portion out the mixture onto a parchment-lined baking sheet.
- Carefully place the baking sheet into the freezer and allow the bites to freeze for at least 2 to 3 hours.
- If desired, melt an additional 2 tablespoons of peanut butter and drizzle it over the frozen bites and sprinkle with crushed graham crackers before serving.
- Once solid, transfer the bites to an airtight container and keep stored in the freezer.
