- Preheat the grill to medium heat (about 350°F or 175°C).
- Wash and halve the peaches, removing the pits. Brush the cut sides with coconut oil.
- Place peach halves cut side down on the grill. Grill for 3-5 minutes until softened.
- In a mixing bowl, combine oats, brown sugar, and cinnamon. Melt coconut oil and mix into dry ingredients.
- Transfer grilled peaches to a baking dish and sprinkle crumble mixture over each.
- Return baking dish to grill and cook for an additional 5-7 minutes until crumble is golden brown.
- Allow to cool for a few minutes, then serve warm topped with vegan ice cream.
